Was asked to make some sugar-free cake pops last week, so I decided to mix up a batch. Started with a chocolate-brownie SF cake recipe that calls for stevia and then dipped them unsweetened chocolate that I "sweetened" with stevia and almond flavoring. They turned out pretty good!

En esta última pastelería, dicen que prefieren utilizar el azúcar (simplemente en dosis disminuidas) porque la miel, el sirope de arce o el de arroz son también edulcorantes naturales pero tienen el mismo índice glucémico que el azúcar. La estevia, con un índice glucémico mucho menor, es un edulcorante natural como el maltitol, pero tiene un gusto anisado difícil de equilibrar…
