What is Biscotti?
First, the word “Biscotti” is the plural of “Biscotto,” which originates from the Latin word “Biscoctus” (twice-baked). Today, the word "Biscotti" translates in Italian to mean "cookie." Any kind of cookie pretty much can be referred to in Italian as "Biscotti."
The history of when the Italians first started making "Biscotti is somewhat varied, but some say Biscotti originated in the Italian city of Prato. All accounts refer to Biscotti being made as food that would not spoil during travel and were very dry and could be stored for long periods of time. Thus, it was important that certain ingredients (such as eggs and butter) were left out.
Today, what many Americans have come to refer to as "Biscotti" are those twiced-baked elongated biscuits that can be enjoyed anytime of day! While there are many different ingredients now being added to the vast variety of Biscotti on the market today, Annabelle not only utilizes mostly traditional ingredients in her Italian Biscotti, but also strives to ensure that they are filled with flavor and contain only natural ingredients, and no preservatives. Annabelle's Lemon Biscottini
This is not your typical hard and crunchy "biscotti," but rather a soft one as it is made from almond paste. Almost like a Lemon Macaroon, together the Lemon-Almond flavors have been "married" in order to make the perfect little "Biscottini." Truly a delight in every bite!
